overrider on incubator

Just got a second hand incubator and have plates ready to incubate. Trying to get the right temperature and I dont know what the overrider is/does. Says for 30degrees set overrider on 1and a half and temp on 1 and three quarters, which is true and correct, but teach wants 25degrees. I'm not sure the thermostat works without it on hmmm. It's a qualtex thermstat. Appreciate any help.
